When you are on the run but want to get a filling meal it is not very easy. With this Quick Pesto Olive Pasta recipe you can get both.
Quick Pesto Olive PastaPrint This
300g pasta of your choice (vegan)
2 tablespoons vegan pesto
Fistful of cress
10-15 black olives roughly chopped
10-15 green olives roughly chopped
Half a jar of sun-dried tomato finely chopped
One ripe avocado
First, cook the pasta in a large pan of salted water over a medium heat for 10 minutes or until al dente (still with a bit of bite).
While this is cooking, smash up the avocado in a bowl with the pesto and sun dried tomatoes.
drain pasta and transfer the pasta and avocado mix to a bowl and put in some elbow grease to combine.
finally add in the olives, rocket and cress and give one last mix, garnish with a little rocket and olive oil.
