2 tablespoons of mango chutney
1 x 400ml tin of coconut milk
220g if small tomatoes
3 cloves of garlic
1 large red onion
2 tablespoons of olive oil or sesame oil
450ml vegetable stock
Thumb sized piece of ginger (grated)
3 tablespoons of tomato purée
Salt and pepper
1 teaspoon hot curry powder
2 teaspoons Garam masala
Handful of fresh coriander
1/2 fresh green chilli (medium heat)
1/4 teaspoon cinnamon
1 teaspoon turmeric
250g dried red lentils
First things first, rinse, drain and boil the lentils in a large saucepan of boiling water and cook for 10 minutes over a medium heat, drain again and set to one side.
Finely chop the onion, garlic, and chilli then add to a large saucepan with two tablespoons of olive oil and cook over a low heat for 10 minutes or until everything is lightly browned and soft (stirring regularly).
Throw in all the spices, tomatoes, ginger and tomato purée and mix into a paste and return to medium heat for 2 minutes.
Toss in the coconut milk, mango chutney, the juice of 1 lime, cooked lentils and vegetable stock and cook over a medium heat for 15-20 minutes or until oozing like lava .
Mix in and garnish with fresh coriander,lime and serve with boiled rice and poppadoms or eat on its own with a great vegan beer.
